
Final EUROSTARCH symposium
"Health aspects related
to the digestion and fermentation of starch; results of the EUROSTARCH
project in broader perspective"
The
central theme of the final EUROSTARCH symposium are the health aspects of
starchy foods. The results of the EUROSTARCH project will be placed in the
context of the findings of other research groups. A panel of international
experts will discuss the state of the art concerning the health aspects of
slowly digestible starch and resistant starch fermentation with a focus on
the prevention of the development of obesity and type 2 diabetes. The
scientific results will also be discussed in relation to their societal
impact and their consequences for starch processing techniques. Finally,
based on the discussions, recommendations about directions for future
research can be defined.
